Homemade Vanilla Extract
  • 3-4 Whole Vanilla Beans
  • 1 c Vodka (highest proof you can find)
  • Dark colored bottle with tight fitting lid.

Split beans lengthwise with a knife leaving the seeds inside. Place beans in the bottle and cover with alcohol. Cap tightly. Shake the jar and store in cool, dark area (pantry?). Shake mixture daily for 4-6 weeks.

The extract will be ready in 2 months. You can add more beans as necessary to make the mixture stronger. Just make sure the beans are covered with the alcohol at all times. This extract will last indefinitely and becomes more flavorful as it ages. Makes a great homemade gift.
